"The Bottom Feeder": Fried Catfish and Creamy Cheese Grits

First off, let me start by saying that on this day I drove 2.5 hours home for a dental exam that was in fact scheduled on Thursday at 2:00 p.m…and it was a Tuesday y’all. My T’s were literally crossed.

Listen, I was more heated than a hot summer day on the tobacco farm in South Georgia. I then got over it quicker than my week-long relationship with my middle school ex. I was actually upset because of my failure to my intuition; it landed me with such an unrewarding trip. There’s a lesson in that; follow your intuition for your insides always know what’s up. 

I cooked this catfish with an anxious mind. I sometimes get stuck in the past or stuck in the future which means I’m not in the present as much as I would like. I felt like I mentally tapped in and out while cooking this dish. The tapping in and out felt like listening to “Knuck if You Buck”, followed by “He’s Able”, and ending with Sade’s “Smooth Operator.” Essentially, my mind was everywhere. Nonetheless, I kept on keeping on and made it to the end.

The final product is called “The Bottom Feeder” Fried Catfish and Creamy Cheesy Grits I called this dish “The Bottom Feeder” because so many people act like they aren’t about that catfish life because it’s beneath them. MEANWHILE, they’re paying to eat lobster like it’s top-grade and lobster are eating the same poopity scoop as catfish.
